This classic fillet knife from Roselli has an eye for any precise work around the kitchen, such as cutting out bones and cutting off membranes and fat from a piece of meat. Filleting a fish with Roselli's fillet knife can be a pure pleasure. The way the knife slides through the fish and clears away any dull bones is really satisfying.
The blade is made from UHC steel (Ultra High Carbon) and the handle is heat treated curly birch, coated with linseed oil – which ensure a firm grip, even when wet. Comes with a knife rack in birch, also with a linseed oil coating.
The UHC steel gives you an extremely sharp knife that keeps its sharpness for a very long time – keep in mind that the hard UHC steel is not suitable for penetrating bones or other hard materials.
